Production Process
● Harvesting: Manually picked, typically following standards like one bud with one leaf or one bud with two leaves.
● Withering: Fresh leaves are spread out to partially dehydrate, initiating the formation of aromatic compounds.
● Kill-Greening (Sha Qing): Pan-fired with a combination of tossing and steaming to evenly remove moisture and deactivate enzymes.
● Rolling: Breaks the leaf surface structure, rupturing cell walls to ensure full infusion during brewing while shaping the leaves into tight, curled forms.
● Sun-Drying: Rolled leaves are naturally sun-dried to preserve organic compounds and active substances.
● Pressing: Sun-dried maocha (rough tea) is steamed and compressed into cakes (Bing Cha), bricks (Zhuan Cha), or nests (Tuo Cha).
Quality Characteristics
● Appearance: Robust, thick strands with uniform dark green hues and an oily sheen.
Aroma:
