Overview

Huangshan Maofeng is a roasted green tea originating from Tangkou and Fuxi in She County, Anhui Province. It was first developed by the Xie Yu Da Tea House during the Guangxu era of the Qing Dynasty. Named after its origin in the high peaks of Huangshan and its strip-shaped roasting process, it gained the "Geographical Indication Product" certification from China's General Administration of Quality Supervision in 2002. In 2008, its production technique was listed as a National Intangible Cultural Heritage, and in 2022, it was inscribed on UNESCO's Intangible Cultural Heritage List.

 

Growing Environment

Huangshan lies in the transitional zone between subtropical and temperate climates, featuring high mountains, dense forests, mild weather, fertile soil, abundant rainfall, high humidity, and limited sunlight—ideal conditions for tea cultivation. Additionally, the widespread growth of orchids in the area imparts a unique floral fragrance to the tea leaves.

 

Harvesting Standards

●  Premium Grade: Picked around Qingming Festival (early April), using one bud with one newly unfolded leaf.

●  Grades 1-3: Harvested around Guyu Festival (late April), with standards varying from one bud with one leaf, one bud with two leaves, to one bud with two or three newly unfolded leaves.

 

Production Process

●  Kill-Green (Sha Qing): Pan-fried at 60–180°C to deactivate enzymes.

●  Rolling (Rou Nian): Lightly rolled to shape the leaves.

●  Drying: Divided into pre-drying (Mao Huo) and final drying (Zu Huo), using low heat for slow roasting.

●  Sorting: Impurities are removed, followed by re-roasting at 70°C to ensure thorough drying.

 

Quality Grades

●  Premium Grade: Plump, uniform buds resembling sparrow tongues, ivory-colored with golden fish leaves. Fragrant, fresh, sweet, and mellow, with a clear, bright light yellow-green liquor.

●  Grade 1: Slightly curled leaves with visible pekoe, fresh and brisk, producing a bright green infusion.

●  Grade 2: Well-shaped leaves with a refreshing aroma, smooth taste, and bright green liquor.

●  Grade 3: Slightly curled leaves with a balanced flavor, yellowish-green liquor, and lingering fragrance.

Brewing Guide

●  Use 3–5g of tea per serving.

●  Brew with 80–90°C water in a glass or white porcelain cup.

●  First, add 1/3 water, wait 3 minutes for leaves to unfurl, then top up.

●  Can be steeped 4–6 times.
