Historical Origins

●  Origins: While tea production in Qimen dates back to the Tang Dynasty (when the region was part of Shezhou and mentioned in Lu Yu’s The Classic of Tea), modern Keemun black tea was developed in 1875.

●  Key Figures:Yu Ganchen, a native of Yi County, Anhui, established a tea workshop in Yaodu Street, Jiande County after retiring from Fujian, adapting Fujian black tea techniques ("Min Hong").

Hu Yuanlong of Qimen also pioneered local black tea production by refining methods from other provinces.

 

Growing Environment

Produced in Qimen, Dongzhi, Guichi, Shitai, and Yi County (Anhui) and Fuliang, Jiangxi, the tea thrives in:

●  Elevation: 100–350m hills and slopes.

●  Climate: Mild temperatures, high humidity, abundant rainfall (year-round), large day-night temperature differences, frequent fog, and limited sunlight.

●  Soil: Rich in alumina and iron, ideal for tea cultivation.

 

Harvesting

●  Standard: Fresh leaves are processed immediately to preserve quality.

●  Premium grades: Primarily one bud + one leaf or one bud + two leaves.

 

Seasonal Batches

●  Spring: 6–7 harvests.

●  Summer: 6 harvests.

●  Autumn: Minimal or no picking.

 

Production Process

Primary Processing:

●  Withering: Enhances enzymatic activity.

●  Rolling: Shapes leaves into tight strips, rupturing cells to enable fermentation.

●  Fermentation: Critical for developing the red color and signature flavor.

●  Drying: Halts fermentation, stabilizes quality, and enhances aroma.

●  Refinement:Sorting, cutting, winnowing, re-roasting, and blending to achieve uniform grade and flavor.

●  Liquor: Bright red and transparent.
